1.) Your website doesn't give much info. Is there a place I can find more information on Gratitude Cafe & Bakery?
Most defiantly! Our website is still a work in progress & with the Cafe currently not open for business... we are using Facebook as a way to keep folks in the loop on up to date info regarding renovations & opening events. 'Like' us on Facebook at: www.facebook.com/GratitudeCafeBakery 2.) Where is Gratitude Cafe & Bakery located? We're located in old Bethany (Bethany Heights) town & proud of it! Our building is located at 1551 N. Cotner Blvd. on the corner of 66th & Fairfax. We are the last building still in existence from prior to annexation of Bethany town into Lincoln, Nebraska. 3.) Where did the soda machine go in front of the building? Let us explain for those who have no clue where this question comes from... our Facebook profile pic is of the building when it was a working salon over 10 yrs. ago. Why? It was the only photo we had at the time. But needless to say, the soda machine is long gone! So far gone that the closet one is two blocks south near Four Star Drug. No worries, we will offer soda! Bottled, of course! 4.) UPDATED! 4/29/12 When is your Grand Opening? We are holding our breathe and being bold with this answer! This summer! It might be mid-Summer or later Summer, but we hope Summer 2012! 5.) UPDATED! 4/21/12 Why is it taking so long to open? We feel the same way! A snail moves quicker (in many cases!) Factors include: Day jobs, picking up pieces of the building that prior owners or renters left for years without fixing, restoration projects, renovations, building permits, permits, permits, permits... and oh yeah, permits! An extreme slow process we're not in control of. 6.) UPDATED! 4/21/12 Who is renovating the building? This may shock you, but to-date 3 women! There is Kat (owner) & her mother, Maralee... plus much paint help from friend, Mary! Past help includes: Eddy and Cherry sanded floors, Sue helped paint the old Vault, Margaret helped rip up flooring & Chris helped rip up carpet & in clean up! The majority of the work is being done by Kat & Maralee! 7.) What will your business hours be? We'll be a breakfast/lunch place with full bakery all day. 8.) What is your menu? Our Bakery will focus of region classics & homespun baked goods, like scratch cakes, macaroons, brownies, cookies, rolls, sticky buns... etc. Breakfast items will include: scones, muffins, donuts, granola... etc. Lunch includes: vegetarian soups, seasonal salads & comfort classics... etc. 9.) Will you have coffee? Of course! And loose teas! All organic, Fair Trade... but no lattes! We draw the line at fancy drinks! 10.) Will you have cupcakes? Sometimes. Within Lincoln there are a handful of "cupcake bakeries" who are masters at what they do! If you want great cupcakes, we'll give you contacts! 11.) Will you offer gluten-free baked goods? When first open we want to focus on vegan & vegetarian, although Kat would like to move into gluten-free products... gradually. There will always be something for everyone! 12.) What's the difference between vegetarian & vegan? Simply, vegetarian is "no meat." Yes, that includes chicken! Vegan is "no animal products" like eggs, butter, cream... etc. (sometimes even includes honey!) The definition depends on the person. 13.) Gratitude is vegetarian then? Yep. You got it! Although we will have comfort food that everyone will recognize... 14.) What's with the soaps (you mention on Facebook?) And retail talk? We will have a good size retail area within Gratitude. Our gift shop includes everything from books, music, home decor & artisan products (such as our "made in store" organic, vegan soaps.) We also want to offer a small section of gift wrap (or bags) & cards for those on the go! 15.) Did Kat go to culinary school? Nope. School of Grandma's Kitchen! But has since been a vendor at farmers' markets as a home-bakery, a commercial baker & has catered for several large corporations in town. 16.) What does Groovy Guru Granola have to do with Gratitude? Kat is sole-owner of Groovy Guru Granola & on it's 3rd anniversary Kat had a decision to make. "Go big or go home," as a friend put it. Thus Gratitude was born! Kat bought the building to own a space for her granola company to grow & a positive place for folks to come & enjoy her food & community. 17.) So, why does Kat call herself a baker & not a granola maker? Starting in 2008 she has been a vendor at several farmers' markets under the name Sweet Love Bakery. Sweet Love was a home bakery which has now turned into Gratitude... baking came before the granola company & is one of Kat's great passions. 18.) I'm a Granola Groupie! Will you carry Groovy Guru Granola? Of course! In fact, we will carry the entire line-up which includes ALL 3 flavors & the Nudist Snack Packs! And NEW seasonal blends only will be found at Gratitude! 19.) Why the name Gratitude Cafe & Bakery? The story behind the name is related to a song lyric! Kat's personal philosophy is to live in a constant state of gratitude... & it's a hope that the space will be a poisitve place to come, eat & have community! 20.) I have a question, who do I ask?
